{Love Made} Chia Pudding With Fruits and Spices ~ Raw

Variating the breakfast is fun! I want something that will fill me up until lunch, so I usually aim for a raw "oatmeal", but I've found that a chia seed based breakfast keeps me satisfied pretty long as well. Here is a recipe I made up the other day.
Blueberry Chia Pudding (2-3 servings)
1 dl (less than 1/2 cup, one cup equals approx 2,5 dl) blueberries
1/2 dl mango
1/2 dl strawberries (one large and one middle sized)
1 teaspoon coconut oil
3 tablespoons chia seeds
2 tablespoons mesquite, or to taste... less or more... (Mesquite is a natural sweetener with a taste of fudge, exchange it for something else if you don't have it)
1-2 tablespoons almond butter with 2 dl water (or ready made almond milk, or any other milk of choice)
fresh ginger to taste
cardamom to taste
honey to taste(optional)

Blend all ingredients with a food processor or similar. Taste it, so that you're satisfied with how sweet it is and such. We all want different sweetness :))) When feels just right ~ Pour it in an airtight container or a glass jar with a lid to let sit in the fridge until thickened (it thickens pretty fast since also includes coconut oil which hardens very quickly when chilled). Can be kept in the fridge for at least a few days. Serve in a bowl or a glass with your favorite toppings of the day! I love topping it with sliced fresh banana and a couple of dates cut into pieces with scissors... & in the picture I've served it in a glass ~ topped with shredded coconut, goji-berries and cardamom...yum... :))) Depending on how much you want for breakfast and what you top it with it, I'd say this batch could be up to 3 servings. Satisfying and Healthy Breakfast, or at any other preferred time of the day :)))
