{Love Made} "Fake-Bacon" ~ Raw ~ Crisp Marinated Aubergine/Eggplant

Wow, this stuff is a very delicious and a cool addition to salads, sandwiches, burritos.. you name it... And the seasoning can be modified and/or varied of course! It adds some crispiness and some awesome taste to the dish. In this recipe I'm adding some lapsang tea to the marinade for the smoked-flavor, feel free to skip it or use some other ingredient that adds some smoke to it. The marinade was made improvising, so the measurements are approximate.
Crisp Marinated Aubergine/Eggplant ~ Raw "Fake-Bacon"
1 aubergine/eggplant (medium size) sliced lengthwise
1 tablespoon ume-plum vinegar
1 tablespoon extra virgin olive oil
1 tablespoon honey
1/4 teaspoon lapsang tea (grind this amount, it gets less when grinded)
approx 1/4 teaspoon salt to taste (note that the ume vinegar is salty and the smoked tea adds some strong flavor too, no need for alot of salt - taste it!)
a pinch of cayenne pepper (to taste)

Marinate the slices for approx 2 hours. Then spread them out on a baking sheet to dehydrate in the oven until crisp (at lowest temperature, it might take around 24 hours depending on thickness etc and remember to let the humidity out every once in while...), or use a dehydrator. When crisp, add them to whatever dish you would love something extra with... & ENJOY!!! :))) Leftovers, if any, can be stored in an airtight container or glass jar with a tight lid in the fridge for about a weeks time.
